Leek

Leek belongs to the lily family and does not have a bulb but a bundle of leaf sheaths. Summer leek has a long, white stem with pale green foliage. The winter leek has a short, white stem with dark green foliage. Leek has a slightly bitter flavour.

Cultivation & harvest

Leeks like it sunny, but can also thrive in partial shade locations. When choosing a location, pay attention to moist, nutrient-rich soils to achieve an optimal yield. In principle, a distinction is made between summer and winter leeks. For this reason, leeks are available freshly harvested from the Pfalzmarkt all year round.

Use

Leek is usually served boiled or steamed, but can also be eaten raw in salads. The vegetable is ideally suited for use in soups, stews or bakes. Together with a tasty sauce, it makes an ideal accompaniment to flash-fried meat. It is used as soup greens in combination with carrots and celeriac.

Storage

The leaf tips should be fresh and upright in a fanned arrangement, the shaft must be firm and the root white. Leek stays fresh for around one week in the crisper drawer of the fridge.
